Stir-fried Shrimp, Eggs,& Garlic Chives

Stir-fried Shrimp, Eggs, and Garlic Chives (Chinese Chives) is a classic Cantonese dish. It's one of our favorite comfort foods. It's delicious, quick, & very easy to make at home. Typically, stir-fried Eggs & Chives alone is tasty enough but we decided to add shrimp to it. This dish tastes best paired with a bowl of white rice on the side!

Ingredients

Servings: 2-3

  • 1 lb Large Shrimp, shelled & deveined

  • 1 teaspoon Shaoxing cooking wine

  • 1/8 teaspoon ground White pepper

  • 1 teaspoon sea salt

  • 1 teaspoon baking soda

  • 4 large room temperature Eggs, beaten

  • Pinch of ground black pepper + salt to season eggs

  • 1 bundle Garlic chives (Chinese chives,) chopped in small pieces or 1 inch

  • Garlic & Ginger optional if you want more aromatics

  • 1 Tbsp olive oil

Instructions

  1. Brine shrimp in cold water, sea salt, shaoxing wine, & baking soda for 10 minutes in the fridge. This allows the shrimp to be crisp in texture. When done, rinse and drain the shrimp in cold water. Pat dry.

  2. In a wok, heat 1 Tbsp of olive oil on high. Add shrimp and cook 2 minutes on each side.

  3. Add garlic chives and stir fry for a one minute.

  4. Turn to medium-low heat. Season eggs with ground black pepper & salt. Add eggs and let it cook for 30 seconds. Once you see it solidify a bit, use a spatula to scrape the edges gently towards the center of the wok. Do this a few times as the eggs are cooked to desired. FYI, It tastes best when the eggs are a bit runny.

  5. Transfer to a plate. Enjoy!
