Spam Musubi is a delicious Hawaiian snack and it's easy to make at home. All you need are pantry items: Spam & Rice. No worries if you don't have a musubi mold, you can use the Spam container!
Ingredients
Servings: 8
Sushi Rice:
2 cups uncooked sushi rice or any short grain/medium grain rice
Water
1/3 cup Rice Vinegar
2 Tbsp granulated sugar
Spam:
1 can (12 oz) Spam, sliced into 8 pieces - we like the low sodium Lite Spam
KEEP the Spam can!
Cling Wrap
3 Tbsp Low Sodium Soy sauce
2 Tbsp sugar
3 sheets roasted seaweed (Nori), cut in thirds into long strips
4 large eggs, beaten
1 Tbsp Olive oil
Instructions
Rice: Cook sushi rice according to package. In a pan, heat rice vinegar and sugar on medium to low heat until sugar dissolves. Stir several times then remove from stove and let cool. Once rice is cooked, combine with vinegar + sugar & mix well. Set aside. Rice should be at room temp. before making spam musubi.
Spam: In a pan, add slices of Spam to pan fry it on medium heat. Pour soy sauce + sugar mixture over the spam to marinate in it for 5 minutes. Once slightly browned and crispy looking, flip over and do the same until desired crispiness is achieved. Transfer to plate.
Eggs: Heat 1 Tbsp of olive oil in a square or griddle pan. Pour beaten egg and cook on low heat. Fold the egg in 1/3 by rolling it with a flat spatula. We try to fold it to the size of the spam.
Assemble: Lay out all items including Nori sheets on table. Using the empty spam can, place cling wrap and press down to tightly cover all sides of the inner can (be sure to have a few inches sticking out from the top of the can so you can grab the musubi out of the can easily).
Add sushi rice to over the bottom of the can - pack about 1 to 1.5 inches of rice tightly. Next, add egg then spam - press to tighten. Remove the musubi from the can by grabbing the excess cling wrap and lift up.
Place the spam side down onto the center of the nori sheet. Wrap nori sheet around the musubi. Seal the sheet with a few pieces of rice and there you have it! Your own Spam & Egg Musubi.
