Spice up your meatloaf game with this delicious Kimchi Meatloaf! If you want something different, try out this sweet & spicy Korean style meatloaf.
Ingredients
Servings: 4
1 lb ground Turkey or ground Beef or meatloaf mix
1 cup Kimchi (cut in small pieces with a kitchen scissor)
3 cloves Garlic, minced
1 teaspoon Ginger, minced
1/2 Onion, diced
1 Tbsp Low Sodium Soy sauce
1 Tbsp Gochujang paste
1/2 cup Panko
1 Egg
Gochujang sauce
1 Tbsp Gochujang paste
1 teaspoon Brown sugar
1 Tbsp Soy sauce
1 Tbsp Apple cider vinegar
6 Tbsp water
Instructions
In a large bowl, combine ground meat, garlic, ginger, onion, soy sauce, gochujang paste, panko, and egg. Mix together really well.
Pour the meat mixture in a loaf pan and spread into a flat layer evenly. Don't press it too flat.
Preheat oven to 350F and bake uncovered for 40 minutes.
Make gochujang sauce
After 40 minutes, pour gochujang sauce on top of the meatloaf and spread evenly. Return to oven and bake for another 10 minutes. When internal temp. turns to 160F, it is done.
Remove meatloaf from the oven and let it sit for 10 minutes before slicing. Enjoy!
