Chinese Fried rice is a very popular dish that you can find at nearly any Chinese restaurant. Fried rice is absolutely delicious and it's one of our favorite stir fry dishes to make at home because it's easy and can be made in many variations! It's an excellent dish to utilize leftover foods. In fact, the best fried rice is made with left over rice that is at least a day old.
Ingredients
Servings: 4
For the Beef:
5 oz Beef, cut in thin pieces (flank, chuck, or ground beef)
1 teaspoon white pepper
2 Tbsp Soy sauce
2 teaspoon Shaoxing cooking wine
For the Fried Rice:
3 cups cold left over rice, preferably Jasmine rice or any long grain rice
2 cups frozen vegetables
3 eggs, whisked
1/2 onion, diced
1 Tbsp Ginger
1/4 cup scallions, chopped
1 Tbsp garlic, minced
2 Tbsp Soy sauce
1 Tbsp Shaoxing cooking wine
2 Tbsp cooking oil, divided
1 teaspoon sesame oil (optional)
Instructions
Marinate the beef with white pepper, soy sauce, and shaoxing cooking wine for at least 30 minutes.
In a wok or large skillet, heat 1 Tbsp of cooking oil on high heat. Add marinated beef and cook for a few minutes until slightly cooked. Transfer to a plate and set aside.
Heat 1 Tbsp of cooking oil on high heat. Add one item at a time and stir-fry until fragrant - ginger, garlic, onions, scallions, and frozen vegetables. Stir fry until vegetables are cooked.
Push the all of the vegetables to 1 side of the wok/skillet to create an empty space. Add the beaten eggs to the empty space and let it cook until 1/2 done.
Throw in the left over rice (try to break apart clumps first before adding it to the wok/skillet). Using 2 spatulas, continue breaking up clumps of rice and vigorously mix it with the eggs & vegetables.
Add soy sauce, shaoxing cooking wine, and sesame oil (optional). Stir a few times then add the Beef.
Stir fry all ingredients until beef is cooked. Transfer to plate and enjoy!
Note: We generally cook with lower sodium content. Feel free to add more soy sauce per your liking. You can add it at any step of the process but recommend adding 1 Tbsp at a time after everything is cooked.
