This cuban style chicken is very flavorful with a refreshing citrus taste. We paired it with rice, black beans, and sweet plantains but you can pretty much pair it with anything!
Ingredients
Servings: 3
2 lbs skin-on Chicken (we used 8-10 Chicken drums)
6 cloves Garlic, minced
1/3 cup Olive oil
1/4 cup fresh Lime juice
1/3 cup fresh Orange juice
1 teaspoon ground black pepper
1 teaspoon Oregano
1/4 cup Cilantro
1/2 teaspoon sea salt (add more as desired)
1/2 Tbsp Cumin
Instructions
Make Mojo sauce by combining garlic, olive oil, lime & orange juice, black pepper, oregano, cilantro, salt, and cumin in a food processor.
In a large bowl or zip lock bag, marinate chicken in mojo sauce for at least 1 hour.
Preheat air fryer for 3 minutes at 390F. Spray oil in basket and place chicken in without overlapping. Air fry at 390F for 15 minutes then open the basket, flip the chicken and cook for another 5 minutes, increase to 400F and cook for another 3 minutes to crisp the skin.
