Making the Cubano seems like a lot of work to make at home but it's so delicious and worth it! Once the Mojo pork is made, you just have to set up a work station to assemble it. The roast pork recipe is adapted from Coco & Ash's "Authentic Cuban Pork Roast" recipe.
Ingredients
Servings: 4
Cuban pork Mojo marinade:
3-4 lb Pork Butt
1/2 cup olive oil
4 limes, juiced
1/3 cup fresh orange juice
6 garlic cloves, minced
1/2 teaspoon cumin
1 Tbsp sea salt
1/4 teaspoon black pepper
2 teaspoons fresh oregano
1/4 cup cilantro, stems removed
Other ingredients for Cubano:
Cuban bread or Italian bread
Deli ham
Swiss cheese
1-2 Tbsp melted Butter
Dill pickles, long slices
Yellow Mustard
Instructions
Making the Pork: In a food processor or blender: combine olive oil, orange & lime juice, garlic, cumin, salt, pepper, oregano, and cilantro. Place pork in a ziplock or large bowl and pour marinade over it. Massage well and marinate in the fridge overnight.
After marinating, we cooked the pork in a pressure cooker on high settings for 2-3 hours or until tender enough to shred the pork. Otherwise you can roast it in the oven at 350F for 3-5 hours.
Assembly of the Cubano: Set up a work station with the shredded pork and the rest of the ingredients. Cut the bread in 1/2 and spread mustard on both. Place in the following order on the bottom bread -> swiss cheese, ham, pork, dill pickles, cheese again, then bread on top.
Brush butter on the sandwich then press the sandwich with a panini press for 3-5 minutes or until the cheese is nicely melted.
Notes:
If you don't have a panini press, you can also place the sandwich on a skillet then use the bottom of another clean flat pan and press with it.
